Tzatziki Sauce

Ingredients

  • 1 Large Cucumber, halved seeded and shredded

  • 1/2 tsp salt

  • 1 Cup Plain Greek Yogurt

  • 1/4 cup Olive Oil

  • 2 – 4 Garlic Cloves through garlic press

  • Juice of 1/2 a lemon

  • 1-1/2 tsp dill or mint or both blended

  • Salt and pepper

Directions

  • Step One – Prepare the Cucumber
  • Cut cucumber in half, and remove seeds with a spoon
  • Shred and place into a strainer over a bowl, salt and allow to stand for 15 minutes to allow water to drain.
  • Drain cucumber and firmly squeeze cucumber shreds in a dish towel or sturdy paper towel to remove as much water as possible
  • Step Two – Combine ingredients
  • Put one cup yogurt into a bowl
  • Add 1/4 cup Olive Oil, plus or minus to taste
  • Add six garlic cloves—more or less to your tastes—pressed through a garlic press
  • Add the juice of 1/2 lemon.
  • Add fresh, chopped dill to taste
  • Add cucumber once fully drained and whisk ingredients together

  • Refrigerate until ready to use, should keep for a week.
